Good handling conditions of the olives, from harvest till consumption, is of great importance and can significantly affect the quality of olive oil. That is why olives are brought to the olive mill every day, immediately after harvest; they are transported in perforated plastic containers which guarantee their healthy state, facilitate ventilation and avoid temperature increase, so that the acidity remains very low and the oil retains its health benefits and its distinctive taste.
In the mill, oil extraction is carried out promptly, in immaculate sanitary conditions, with the use of state-of-the-art machinery and at a temperature that never exceeds 25C0 - 28C0, so that the olive paste does not remain in the malaxation machines for more than 20 - 30 minutes.
